goodness!

Wow time got away again! Sorry I haven't put up the pictures yet the laptop crashed before I got a chance to get them on and we just got a new computer so hopefully they'll be up soon.  I'm 11 weeks and 4 days today and I have officially am under 200 days until the baby's due date. Princess has been acting a little better now she's starting to understand that I can't pick her up as much as I used to thankfully.  My morning sickness is pretty much gone unless I forget to eat. Which is quite a common occurrence  lately in fact I forget everything even if I have it written down and in my hand lol.  I've been so tired lately I want to do nothing but sleep but my insomnia has been kicking my butt so bad.  It took me two weeks to get the kitchen completely clean and shiny again because when I had my morning sickness I couldn't even walk into the kitchen with out wanting to throw up TMI I know I'm sorry.  Oh! A big plus I got some sweets back! Finally! Before the baby just hated anything sweet.

Recipe for today comes from Confessions of a Cookbook Queen and it is Homemade Cadbury Eggs



HOMEMADE CADBURY EGGS
INGREDIENTS
1/2 cup light corn syrup
1/4 cup (1/2 stick) salted butter, softened
3 cups powdered sugar
1 teaspoon vanilla
Yellow food coloring
Chocolate candy melts or almond bark


In the bowl of a mixer, cream the butter, corn syrup and vanilla until smooth. Slowly add the powdered sugar and beat on medium low speed until well mixed.


Spoon about a third of the mixture into a separate bowl and color it with yellow food coloring. Refrigerate the white and yellow mixtures for at least an hour, for easier handling.


Roll the yellow mixture into balls and place on a wax paper lined baking sheet. Place in the freezer for 20 minutes or so. Remove from freezer and cover with white candy and form into an egg shape. Freeze eggs for about 30 minutes.


Melt your candy melts or almond bark according to package directions. Place eggs in the chocolate and coat completely. Remove and place back on wax paper lined baking sheet. Place in the refrigerator until chocolate has set.

Saw the baby today

We saw the baby today it was all curled up in the beginning but a few minutes in the Twinkie I about 20 mins before because it started wiggling up a storm. Heart beat started at 171 during the calm period but during the wiggling it went up to 180. So going from the old wives tale about heartbeats it's going to be another girl.  But we will have to wait and see.  Also the due date got pushed back to October 5th so I'm 9 weeks today. I will had an ultrasound picture next time as I'm way too exhausted to go get them all.

It's finally feeling like winter here even though it's the 2nd of March. It has been mostly snow free in the valleys but we got wailed on and with the snow, the cold and feeling like winter I'm in a huge soup mood today's recipe is a classic chicken noodle. Mainly because The Princess has a small cold and a toddler with a cold is a sad thing to see.

Grandma's Chicken Noodle Soup


Ingredients

  • 2 1/2 cups wide egg noodles
  • 1 teaspoon vegetable oil
  • 12 cups chicken broth
  • 1 1/2 tablespoons salt
  • 1 teaspoon poultry seasoning
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1/3 cup cornstarch
  • 1/4 cup water
  • 3 cups diced, cooked chicken meat

Directions

  1. Bring a large pot of lightly salted water to a boil. Add egg noodles and oil, and boil for 8 minutes, or until tender. Drain, and rinse under cool running water.
  2. In a large saucepan or Dutch oven, combine broth, salt, and poultry seasoning. Bring to a boil. Stir in celery and onion. Reduce heat, cover, and simmer 15 minutes.
  3. In a small bowl, mix cornstarch and water together until cornstarch is completely dissolved. Gradually add to soup, stirring constantly. Stir in noodles and chicken, and heat through.

TIPS: The key is to add an ENTIRE cooked rotisserie chicken to the broth with the veggies. Be sure to pour in the drippings from the pan. Let this simmer for about 15 minutes, then remove chicken and add the meat back in. This gives it the most amazing flavor! Also added peas, carrots, fresh garlic, basil, bay leaves and fresh cracked pepper.

We're expanding our home by two feet

Well guess what. I'm pregnant! I didn't post this when I said I was because we needed to tell a couple friends and family before we posted all over the internet, that wouldn't be a great way for them to find out lol.  We found out on my birthday and what a wonderful surprise it was we have been trying for 11 months and the month we didn't really do any charting or even think about it we got pregnant. We have our first ultrasound on Friday. We're due date is on or around my daughters birthday and we're 10 weeks! We're so excited!

Finding out has brought to my mind how much I know now compared to when I was having my daughter.  The first time around I was so nervous and I didn't know what to do or look forward to or even what to buy.  I have the experience of a previous pregnancy and care for a newborn but also I will have a new challenge: caring for a newborn while caring for a toddler.

I started up a list of things we need to get and my Hubs says "Why do we need this when we have all this stuff from when we had Princess?" I then explained to him the importance of why we need Boppy slip covers and a new rocking chair. Why I need new nursing clothes and bras (I outgrew them) lol.  My other mom friends all completely agree with my list and some even told me easier ways to get them or even make them myself. One even showed me how to make a Boppy slipcover. It's surprisingly easy.More will come soon as I think of it lol,

Still Alive

This is a quick post just to say yes I'm still alive. Life got busy for a bit there and my birthday was on Saturday.  I'm really busy right now but I will for sure post more next week and I will also post pictures up of my birthday present which is AMAZING! You can't see until next week though sadly :'(

For the New Year

Well, last year was pretty fun and I have high hopes for this year.  So far the Hubbs has decided for us that we are going to be more healthy for our New Year's resolusion and I think it's going to be fun! Yet kinda hard to do as I'm used to using butter and I LOVE butter oh well. I haven't done any blogging yet in a while so I thought I would today with tonight's dinner.


Today it's from 365 days of crock pot cooking




Slow cooker Cornish game hens


1 small onion, cut into thick slices
2 cornish game hens, thawed, skin removed and patted dry
4 garlic cloves, minced
1 tsp lemon pepper
1/2 tsp kosher salt
1/2 tsp dried basil


Place onion slices in bottom of slow cooker.  Mix the garlic, lemon pepper, salt and basil together.  Rub all over the hens.  Place hens on top of onion slices (breast side down).  Cover and cook on LOW for about 4 hours.  Discard onions and serve.  Makes 4 servings.

The thing I'm obsessed with

Aprons!
I LOVE aprons they are just so fantastic and awesome!  Sadly, I only have two that I can use at the moment but I plan to remedy that soon lol. I tried to explain what they mean to me to my mom and my husband, but they never understood, and it doesn't help that I could explain it well enough but I recently read a blog post titled Apron Evangelism from Hillbilly Housewife. It explained how I felt about them and inspired me even more about wearing them.  After I showed it to my mother and husband they finally understand my love now.  I went searching on google for apron patterns and there are a TON of them it's so hard to choose from them all.


The recipe for today is what I'm making for dinner on Monday:


Taco Soup
1 lb lean ground beef
1 (28 oz) can of tomatoes (3-4 cups)
1 (17 oz) can whole kernel corn
2 cups of water
1 sm. onion
1 (15 oz) can kidney or black beans
2-3 tblsp taco seasoning
Brown ground beef and onion. Mix in with remaining ingredients. Simmer for 15 minutes. Serve with tortilla chips or Fritos. Serves 8.


Anyway I have to go back to cleaning the stove. I decided at midnight the stove needed to be deep cleaned and I took it apart and scrubbed and scrubbed and it looks shiny! Although I had to soak the metal parts under the burners all night and I still have to scrub them but the Hubbs loved the kitchen when he got up to go to work this morning so it made it all worthwhile.

Chirstmas Time

Gah! It's Christmas time! I've been ready for Christmas since before Halloween.  However, I have next to nothing put up for Christmas other than a wreath that My Hubs' company sent us (that was so sweet). Everything else is either still on boxes or haven't been baought yet (like the tree!) Hopefully we're going to buy it on the 16th along with a tree skirt (no time to make one right now).... and lights.... and the base... What are you talking about I'm prepared. Yeah right like anyone would believe that lol!


Seriously A Homemaker (love her!) has a really pretty matle that I just LOVE and it's not a traditional Christmas green and red, however it is red, but I'm not alway one for tradition. and she said she didn't go shopping for it and that she just "shopped" around her house.  Here is the mantle isn't it pretty?


Make it and Love it has a ton of fun tutorials for christmas also! She uses her Silhouette alot and I really wish I have one but it isn't going to happen anytime soon. Here are some of her projects: framed wall vinylStockingstree skirt,and burlap stockings.


I'm running out of time now before Lily starts demanding for iCarly, believe it or not it was my husband who got her addicted to it, and I still need to finnish folding the laundry lol. So tata for now!
